A famous grilled meatball in a wide and flat form, prepared only with meat and salt, containing no onions, tomato paste, spices, or breadcrumbs.

A local juicy dish where 'madımak' herb, which grows spontaneously in spring in Sivas and Central Anatolian steppes, is cooked with bulgur and pastrami (or minced meat).

A syrupy dessert where baklava phyllo dough filled with rich nuts such as walnuts, hazelnuts, raisins, and almonds is baked in a domed shape like a human head (kelle).
